The aim of the diploma thesis was to evaluate the data gained from a weighine-machine located right in the hall of the selected company. The weighine-machine together with thermometer and hygrometer measures the weight of chickens, numbers of chickens weighed, temperature, humidity and uniformity. The data acquired about the given batches are from September 2014 to March 2016 from both types of hybrids. The results show that hybrid ROSS 308 occurred more often above the growth curve, in summer months it had better daily weight gain and the highest uniformity. Hybrid COBB 500 had better increase in winter and its uniformity was higher in temporary and winter period. According to the correlation analysis, the fact was confirmed, that with the growing weight the number of chickens lowers. The average mortality was around 3 %, the exception was the batch 6/2015 when the mortality was 4,8 %.

The thesis is about the impact of a content of the calcium on a quality of the meat. The target of the observation was whether a feeding with a higher level of the calcium has the impact on the sensorical properties of a breast and thigh muscles. Feeding mixture BR2 contained different level of the calcium during the feeding experiments with the broilers with a hybrid combination ROSS 308. First two groups of those broilers were controlled and fed by mixture BR2 with content 2 grams Ca per 1 kg. The third and the fourth group got the feed with the content 15 grams per 1 kg. At the end of this experiment tested broilers were killed and the samples for the degustation have been frozen for 30 days at -40 degrees of Celsius. Extremely different groups (2 to 15 g/kg Ca) were chosen for sensory analysis. From the sensorical analysis which was participated by 12 evaluators follow that feeding mixture with higher content of the calcium had no influence on the organoleptic properties of the meat. Statistically significant difference (p<0,05) was determined only for taste in breast muscles based on the different level of calcium after removing the impact of the evaluators and the absence of the foreign smell of the thigh muscles. Upon receipt of a higher level of Ca in feed (1.08 +- 0.04), the absence of foreign odor was evaluated more favorably than fetal control (0.94 +- 0.04).

This diploma thesis deal with influence inclusion wheat with blue color aleurone layer into ratio of broilers. The experiment was conducted on hybrid broiler chickens Ros 308. The chickens were divided into 30 pieces to the control group which were fed with control feed mixture containing 38.2% wheat Vánek and experimental group which were fed with the experimental feed mixture containing 38.2% blue wheat UC66049. The effect of blue wheat was monitored on weight gain, feed consumption, carcass yield, chemical composition of meat, antioxidant activity, blood biochemical parameters and the microbial population. Statistically significant difference between the groups was observed comparing the weight of chicks aged 29 days and evaluating the average increment in the range of 22 to 29 days of age.Feeding of blue wheat UC66049 didn't have statistically significant on feed intake, feed conversion, carcass indicators, antioxidant aktivity, blood biochemical parametres and microbial population.

Experiment was conducted, in which were served different levels of zinc for the cockerels Ross 308. The aim of my study was to discover, if the level 204 mg Zn/kg of feed mixture will affect the sensory characteristics of the thigh and breast muscle after 30 days of storing. From the sensory analysis, performed by the 12 evaluators, appears, that the higher level of zinc did not have a statistically significant impact on the sensory characteristics of the thigh and breast muscle in majority parameters in my study. Exception was a statistically significant difference (p < 0,05) in aroma at the thigh muscle after correction of evaluator (Zn 24 mg was evaluated 1,03 +- 0,02 and Zn 204 mg was evaluated 0,97 +- 0,02). In the breast muscle of the experimental group was relatively the best rate the juiciness - 5 % above the average. In the thigh muscle of the experimental group was relatively the best rate also the juiciness - 10 % above the average.

This diploma thesis deals with study of influence of addition of different doses, forms of calcium and zinc into feed mixtures for broiler chickens. The aim was to find out how different doses or forms of these minerals affect the concentration of calcium and zinc in the blood of chickens. Ross 308 broiler chickens were used in the experiments. Calcium and zinc were fed to the feed mixture in the form of calcium carbonate, zinc oxide or organically bound zinc. The basal diet of the control group contained 2 g of calcium. Different doses of calcium carbonate (6 g, 9 g, 15 g / kg of feed mixture) were fed to three groups. Four groups were fed with the addition of zinc oxide at doses of 20 mg, 40 mg, 120 mg and 180 mg / kg of the feed mixture. In the next experiment, zinc was fed in various forms and different amounts to compare the effect of feeding organically bound zinc. At the end of the experiment, blood samples were taken during the slaughter and the concentrations of the studied elements were determined. Statistically significant differences in blood calcium levels have been demonstrated between the control group (containing Ca in the feed mixture 2 g / kg) and the groups of animals that we increased calcium (to 6 to 15 g / kg of compound feed). However, experimental groups did not have any significant differences. It has been found that increasing amounts of Ca in the feed have a negative effect on the concentration of magnesium in the blood. In the zinc subsidy experiment, we found conclusive differences between the control group and the experimental groups. At lower doses of Ca (less than 9 g Ca / kg) and Zn (less than 180 g Zn / kg) in the feed mixture, a proven correlation between the concentration of Ca and Zn in the feed and blood was demonstrated.

Ammonia production associated with animal husbandry is important not only in terms of microclimate of stables, but also in terms of its impact on the environment and buildings located near the farms. Different approaches are applied to limit the production of ammonia and the negative effects on animals. The final effect of the measures involve a number of factors, which requires special technological equipment. It has been designed process for evaluating the binding ability of ammonia in clay minerals. It was detected that clay minerals with a smaller fraction had quicker efficiency compared to larger fractions. However a smaller fraction is associated with a higher dust, which is becoming a limiting factor. Application of biotechnological preparations in stables for fattening chickens showed that low pressure nebulizer device can be used not only for adjusting the relative humidity of air and for the application of biological products, which reduce the amount of ammonia in the stable. High or low pressure spraying have been tested in pig and poultry. The nebulizer device may be a tool to reduce the temperature in the barn. The dose and concentration of the specimen as well as the interval of application of specimen and placement of the nozzles in the stable area are important for the elimination of ammonia. The system can be recommended to well-insulated stables, where the short term reduction of ammonia in the stable air may be expected. Based on the results of measuring the effectiveness of biological air washer in pigs, the rise time of the device depends on active microorganisms on surfaces and can take depending on the microclimate parameters more than 3 months. Biological washing of air is sensitive to environmental conditions, which should be constant. When changing the water intended for circulation of air in the machine and ensure its effectiveness, it is recommended to change only one third, compared to one-half that is recommended by the manufacturer. The biological air washer helps to significantly improve air quality in the stables. Moreover, the loss of nitrogen is eliminated.

The aim of the diploma thesis was to evaluate the performance of commercial broiler chicken genotypes Ross 308, Cobb 500 and Hubbard F15. Parental test consisted of parent rearing up to the age of 22 weeks, the laying period up to the age of 62 weeks and from fattening progeny tests (lasting for 35 days or else 42 days). Hybrid Ross 308 chickens reached the highest live weight at the end of the rearing period. Hubbard F15 chickens had the lowest feed consumption per head and day and also the lowest mortality rate. Hybrid Hubbard F15 showed the highest number of hatched chickens per 1 laying hen (137.2 pcs), the lowest feed consumption per head and day (149.4 g) and the highest fertility of hatching eggs (9,2 %). Hybrid Ross 308 showed the highest weight of hatching eggs and live weight at the end of the laying period (cockerels 5 029 g, pullets 4 310 g). Cobb 500 cockerels (2 397 g) and Hubbard F 15 pullets (2 145 g) showed the highest live weight during the 35 day fattening period. The highest breast weight was at the hybrid Cobb 500 (516.9 g) and the thighs weight was the highest at Hubbard F15 (511.9 g). The highest carcass yield was observed at hybrid Cobb 500 (76.30%). During the extended fattening period of 42 days had the highest live weight cockerels Ross 308 (3 096 g), Cobb 500 and Hubbard F15 pullets (2 688 g and 2 682 g). The highest breast weight was observed at hybrid Ross 308 (697.0 g) and thighs weight at hybrid Hubbard F15 (707.6 g). The highest carcass yield was at hybrid Hubbard F15 (78.0%).

This graduation thesis analyses the sensoric properties of the poultry meat with respect to feeding. The thesis is aimed at meaning and quality of the muscle meat of the broiler and description of the influence of the feed on the sensoric qualities. The samples of the broiler (breast and thigh muscle meat) were evaluated from four breeders (A, B, C, D) in three different times. The meat has been evaluated for smell, colour, stringiness, fragility, juiciness, chewability and taste. The differences among individual breeders in analysed properties were assessed as an effects of the feed. The evaluation shows the best poultry breeder in the sense of the breast muscle, has been breeder D. This breeder achieved the best results (p < 0,05) in three parametrs (colour, chewability and taste). The best breeder, in the sense as regards thigh muscle, has been the breeder A, who achieved the best results (p < 0,05) in four parametrs from seven ( fragility, juiciness, chewability and taste). Finally, the three samples of the muscle meat from each breeder were evaluated. In most cases no statistical significance was observed in sensoric quality although few samples showed significant differences in sensoric quality but those are assumed to be caused by other factors than feed. It because all broilers were fed with the same kind of feed.

The topic of my bachelor thesis is the evaluation of the impact of feed on sensory properties of chicken meat. The aim of bachelor thesis is noticed, how sensory properties of meat depend on feed components. This thesis is literature review, the introductory part is overview of broilers farming, chicken meat consumption and egg consumption in Czech Republic and chicken meat characteristic. Following chapter deal with broilers breeding and fattening, characterize the influence of some enriched feed on sensory characteristics of chicken meat and sensory evaluation. The bachelor thesis contains information about the most common broilers of Czech Republic, which are Cobb 500, Ross 308 and Hubbard FLEX. The final part of bachelor thesis focuses on sensory analysis, methods of sensory analysis, terms and determined descriptors.
